Red Lentil Dahl with Charred Broccolini

Ingredients:


  • 2 tablespoons coconut oil

  • 1 yellow onion, diced

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, peeled, minced

  • 2 teaspoons curry powder

  • 1 teaspoon New Chapter fermented turmeric powder

  • 1/2 teaspoon chili powder

  • 2 cups dry lentils, uncooked and soaked

  • 1/2 teaspoon black pepper

  • 1 teaspoon sea salt

  • 1/2 teaspoon red pepper flakes

  • 1 can coconut milk

  • 3 cups of water

  • 1 cup of cooked brown rice, to serve

  • Charred broccolini, to serve

  • Fresh cilantro, chopped, for garnish

 

How to make the Dahl:


  1. Preheat the oven to 300°F.

  2. Heat a large pot over medium heat and add the coconut oil. Add the onion, ginger, and garlic and cook for 5-10 minutes, or until soft and fragrant.

  3. Add the spices, coconut milk, (soaked, rinsed, and drained) lentils, and water to the pan. Bring to a gentle simmer.

  4. Simmer uncovered for 30-35 minutes or until the lentils are soft and the dahl has thickened up, stirring frequently.

  5. Meanwhile, wash, dry, and chop a bunch of broccolini (or broccoli florets).

  6. Place on a baking tray lined with parchment paper and olive oil, season with sea salt and pepper, and bake for 15-20 minutes, or until charred. Rotate occasionally being careful not to burn the broccolini.

  7. Remove the dahl from the heat and serve with cooked brown rice, charred broccolini and garnish with chopped cilantro.
