Baked Oatmeal with Blueberries and Collagen

Ingredients:


  • 2 cups Bob's Red Mill GF organic oats

  • 1 scoop vanilla protein powder

  • 1 scoop Vital Proteins collagen peptides (optional)

  • 1 handful walnuts, chopped

  • 1/2 cup shredded coconut

  • 1/4 cup pepitas

  • 1 tbsp chia seeds

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • 1 pinch Himalayan salt

  • 1 3/4 cups plant-based milk (almond works well for this recipe)

  • 1 cup frozen organic blueberries

  • 2 eggs (substitute with mashed banana for a vegan option)

  • 1 tbsp maple syrup

  • 3 tbsp coconut oil, melted

 

How to make the oatmeal:


  1. Preheat oven to 350°F

  2. Grease an 8x10” baking dish with coconut oil.

  3. Place all dry ingredients into a large bowl and stir to combine. Add the wet ingredients and mix with a wooden spoon until everything is combined.

  4. Spoon the mixture into the prepared dish, smooth, and bake for 40 minutes or until golden.

  5. Allow it to cool in the baking dish.

  6. Serve with seasonal fruit, Coco June coconut yogurt, chopped nuts, and shredded coconut.

Notes: This keeps covered in the fridge for up to one week. I like to make a batch on a Sunday evening for weekday breakfast. Simply cut into pre-portioned squares. It can be eaten straight from the fridge, warmed in a skillet, or enjoyed at room temperature.
